Long enough to say who the range is for and how to choose within it, usually a short paragraph or two. Put it where it helps a browser, and do not bury the products under it.

Do collection pages rank on Google?

They can, and for category searches they are often the page that should rank, because the searcher has not picked a product yet. A collection with a clear title and real text gives a search engine something to rank.
